Cosentino Wine dinner Follow-up!
We had the pleasure of having Mitch Cosentino in town who is also hosting the Piedmont Driving Club Dinner Gala. Also, an icon at the Augusta Nationals where they have featured Coz’s wine at the PGA Media Dinner in 16 of the past 17 years!

Amuse Bouche – Cave de Bissey, Crémant Rosé Brut, Bourgogne NV
Perfect palate starter!
Beet Tartare – blood orange, avocado
Wow pairing of the night! The refreshing berry sweetness, paired with bright acidity. Think the food in wine form, seamless!
Burrata – blueberries, sunchoke, citrus
With the additional age the 2014 Chardonnay showed exceptional Chablis style with rich-creamy notes, grated lemon zest, finishing with a note of Braeburn apple. Not buttery at all!
Seared Sea Scallop – celeriac, trout roe
Understandingly, Cosentino was surprised by this choice as most versions of Cabernet Franc would not hold up to Lambs intense flavors. However, the surprise of the night! High integration with the mint and merlot singing like age-old friends in the finish!
Roasted Rack of Lamb – English peas, bordelaise, mint
Cabernet and Steak are mostly a never miss pairing! The next level of this experience was the smoked paprika dancing with the smoky oak notes of the wine!
Picanha Steak – potato pavé, green garlic
Dessert – Lovo, Colli Eugenai Fiori d’Arancia 2016
